I would like to know any pros and cons on taking off the cats. will i get more power and sound. I have super 40s so i want more sound.

You will gain a little bit in power and probably a bit in mpg, but you will need it if you have emissions testing where live.

I don't have emissions testing yet. I would keep them just in case they change the law. Then i would put them back on. How much do you think I'll gain. How about the sound? 2000 chevy silverado Z71 stepside

Not sure the numbers, but you will see results. No cat will give you less back pressure, there for increasing HP and MPG.

That will for sure give you a better sound. Another good addition would be headers to give it a sound with more destinct stroke sounds, almost like a drag car.
