can you take the catalytic converters off on a 2003 chevy 2500 6.0L? or what will be the problems if you do?

Problems would be: Inspection failure, ECU problems, and it will run lean.
Overall, you will see performance degradation and not an increase, a better alternative would be to go with high-flow cats.
