I have a 2004 silveradio with a 5.3 v8 wat would the engine do if the mass airflow sensor was unpluged becouse some cheap intakes dont have a place for one to plug in

I doubt it would even run. The mass air flow sensor has a huge impact on your air fuel mixture, as this device measures the amount of air the engine is taking in. You would defintely have driveability issues.
